  • 4 ounces (115g) high-quality dark chocolate
  • 1/2 cup (115g) unsalted butter
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1 teaspoon vanilla extract
  • 1/4 cup (30g) all-purpose flour
  • Pinch of salt
  • Optional: powdered sugar, fresh berries, or vanilla ice cream for serving


  1. Preheat your oven to 425°F (220°C). Grease and flour four 6-ounce ramekins or custard cups. Place them on a baking sheet for easy handling.
  2. In a medium-sized microwave-safe bowl, combine the dark chocolate and butter. Microwave in 30-second intervals, stirring between each, until melted and smooth. Alternatively, you can melt the chocolate and butter in a heatproof bowl set over a pot of simmering water (double boiler method).
  3. Once melted, whisk in the granulated sugar until well combined.
  4. In a separate bowl, whisk together the eggs, egg yolks, and vanilla extract until frothy.
  5. Gradually pour the egg mixture into the chocolate mixture, whisking continuously until smooth and glossy.
  6. Sift in the all-purpose flour and a pinch of salt, then gently fold the dry ingredients into the chocolate mixture until just combined. Be careful not to overmix.
  7. Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

  9. Remove the lava cakes from the oven and let them cool for 1-2 minutes. Use a knife to loosen the edges of the cakes from the ramekins if needed.
