Wet Burritos Recipe

Ingredients:

  • 1 lb ground beef or turkey
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels (fresh, canned, or frozen)
  • 1 cup cooked rice
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 can (10 oz) red enchilada sauce
  • 1 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)
  • 6 large flour tortillas
  • Optional toppings: diced tomatoes, sliced avocado, sour cream, chopped cilantro, sliced jalapeños

Directions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, cook the ground beef or turkey over medium heat until browned and cooked through. Drain excess fat if necessary.
  3. Add diced onion, minced garlic, and diced bell pepper to the skillet. Cook until vegetables are softened, about 5 minutes.
  4. Stir in the black beans, corn kernels, cooked rice, chili powder, cumin, salt, and pepper. Cook for an additional 2-3 minutes, allowing the flavors to meld together. Remove from heat.
  5. Pour half of the enchilada sauce into the bottom of a baking dish, spreading it evenly.
  6. Place a generous scoop of the meat and bean mixture onto each flour tortilla, then roll them up tightly, tucking in the ends to prevent filling from spilling out.
  7. Arrange the rolled burritos seam side down in the baking dish.
  8. Pour the remaining enchilada sauce over the burritos, ensuring they are well coated.
  9. Sprinkle shredded cheese over the top of the sauced burritos.
  10. Cover the baking dish with aluminum foil and bake in the preheated oven for 20-25 minutes, or until the cheese is melted and the burritos are heated through.
  11. Once baked, remove the foil and return the dish to the oven for an additional 5 minutes, allowing the cheese to become bubbly and lightly golden.
