Ingredients:
- 1 lb ground beef or turkey
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels (fresh, canned, or frozen)
- 1 cup cooked rice
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 can (10 oz) red enchilada sauce
- 1 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)
- 6 large flour tortillas
- Optional toppings: diced tomatoes, sliced avocado, sour cream, chopped cilantro, sliced jalapeños
Directions:
- Preheat your oven to 350°F (175°C).
- In a large skillet, cook the ground beef or turkey over medium heat until browned and cooked through. Drain excess fat if necessary.
- Add diced onion, minced garlic, and diced bell pepper to the skillet. Cook until vegetables are softened, about 5 minutes.
- Stir in the black beans, corn kernels, cooked rice, chili powder, cumin, salt, and pepper. Cook for an additional 2-3 minutes, allowing the flavors to meld together. Remove from heat.
- Pour half of the enchilada sauce into the bottom of a baking dish, spreading it evenly.
- Place a generous scoop of the meat and bean mixture onto each flour tortilla, then roll them up tightly, tucking in the ends to prevent filling from spilling out.
- Arrange the rolled burritos seam side down in the baking dish.
- Pour the remaining enchilada sauce over the burritos, ensuring they are well coated.
- Sprinkle shredded cheese over the top of the sauced burritos.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 20-25 minutes, or until the cheese is melted and the burritos are heated through.
- Once baked, remove the foil and return the dish to the oven for an additional 5 minutes, allowing the cheese to become bubbly and lightly golden.
- Serve the wet burritos hot, garnished with your favorite toppings such as diced tomatoes, sliced avocado, sour cream, chopped cilantro, and sliced jalapeños. Enjoy!
