Ingredients:
- 250g all-purpose flour
- 1/2 teaspoon salt
- 250g cold unsalted butter, cut into cubes
- 125ml ice water
Instructions:
- In a large mixing bowl, sift the flour and salt together.
- Add the cold butter cubes to the flour mixture. Using a pastry cutter or your fingertips, work the butter into the flour until the mixture resembles coarse crumbs with pea-sized butter pieces remaining.
- Make a well in the center of the mixture and pour in the ice water.
- Using a fork, gently mix the flour mixture and water until the dough starts to come together. Be careful not to overmix.
- Turn the dough out onto a lightly floured surface and gently knead it a few times until it forms a rough ball. The dough will be shaggy and uneven, which is normal for rough puff pastry.
- Roll the dough into a rectangle about 1/2 inch thick.
- Fold the top third of the dough down towards the center, then fold the bottom third up over the top (like folding a letter).
- Turn the dough 90 degrees so that the open ends are facing left and right, then roll it out into a rectangle again.
- Repeat the folding process (step 7) two more times, then wrap the dough in plastic wrap and refrigerate for at least 30 minutes before using.
