Rough Puff Pastry Recipe

Ingredients:

  • 250g all-purpose flour
  • 1/2 teaspoon salt
  • 250g cold unsalted butter, cut into cubes
  • 125ml ice water

Instructions:

  1. In a large mixing bowl, sift the flour and salt together.
  2. Add the cold butter cubes to the flour mixture. Using a pastry cutter or your fingertips, work the butter into the flour until the mixture resembles coarse crumbs with pea-sized butter pieces remaining.
  3. Make a well in the center of the mixture and pour in the ice water.
  4. Using a fork, gently mix the flour mixture and water until the dough starts to come together. Be careful not to overmix.
  5. Turn the dough out onto a lightly floured surface and gently knead it a few times until it forms a rough ball. The dough will be shaggy and uneven, which is normal for rough puff pastry.
  6. Roll the dough into a rectangle about 1/2 inch thick.
  7. Fold the top third of the dough down towards the center, then fold the bottom third up over the top (like folding a letter).
  8. Turn the dough 90 degrees so that the open ends are facing left and right, then roll it out into a rectangle again.
  9. Repeat the folding process (step 7) two more times, then wrap the dough in plastic wrap and refrigerate for at least 30 minutes before using.
  10. Once chilled, the rough puff pastry is ready to be used in your favorite recipes. Enjoy!
