  • 1 pound (450g) mixed seafood (shrimp, squid, and/or scallops), cooked and chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 English cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons chopped fresh dill
  • 2 tablespoons capers, drained
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • Salt and black pepper to taste
  • Optional: chopped avocado for extra creaminess

  1. In a large mixing bowl, combine the chopped seafood, cherry tomatoes, cucumber, red onion, parsley, dill, and capers.
  2. Drizzle the olive oil and lemon juice over the salad. Season with salt and black pepper to taste. Gently toss until everything is well combined and evenly coated with the dressing.
  3. For optimal flavor, cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld together.
  4. Just before serving, taste and adjust the seasoning if needed. If desired, add chopped avocado for extra creaminess and richness.
  5. Serve the seafood salad chilled, garnished with additional fresh herbs if desired. Enjoy this delightful dish as a refreshing appetizer or light meal.
