Ingredients:

  • 1 whole chicken (about 4-5 pounds)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced

  • 1 tablespoon fresh parsley, finely chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil

  • 1 lemon, halved

Directions:

  1. Preheat your oven to 375°F (190°C).
  2. Rinse the chicken under cold water and pat it dry with paper towels.
  3. In a small bowl, mix together the olive oil, minced garlic, chopped rosemary, thyme, parsley, oregano, basil, paprika, salt, and black pepper to create the herb rub.
  4. Rub the herb mixture evenly all over the surface of the chicken, making sure to get under the skin as well.
  5. Place the lemon halves inside the cavity of the chicken.
