Roasted Chicken Recipe

  • 1 whole chicken (about 4-5 pounds)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon fresh parsley, finely chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon paprika
  • Salt and black pepper to taste
  • 1 lemon, halved


  1. Preheat your oven to 375°F (190°C).
  2. Rinse the chicken under cold water and pat it dry with paper towels.
  3. In a small bowl, mix together the olive oil, minced garlic, chopped rosemary, thyme, parsley, oregano, basil, paprika, salt, and black pepper to create the herb rub.
  4. Rub the herb mixture evenly all over the surface of the chicken, making sure to get under the skin as well.
  5. Place the lemon halves inside the cavity of the chicken.
  6. Tie the legs together with kitchen twine and tuck the wings under the body of the chicken to prevent them from burning.
  7. Place the chicken breast side up on a roasting pan or baking dish.
  8. Roast the chicken in the preheated oven for about 1 hour and 15 minutes to 1 hour and 30 minutes, or until the internal temperature reaches 165°F (75°C) and the juices run clear when pierced with a knife.
  9. Once cooked, remove the chicken from the oven and let it rest for 10-15 minutes before carving.
