Ingredients:
- 1 whole chicken (about 4-5 pounds)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 tablespoon fresh rosemary, finely chopped
- 1 tablespoon fresh thyme leaves
- 1 tablespoon fresh parsley, finely chopped
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon paprika
- Salt and black pepper to taste
- 1 lemon, halved
Directions:
- Preheat your oven to 375°F (190°C).
- Rinse the chicken under cold water and pat it dry with paper towels.
- In a small bowl, mix together the olive oil, minced garlic, chopped rosemary, thyme, parsley, oregano, basil, paprika, salt, and black pepper to create the herb rub.
- Rub the herb mixture evenly all over the surface of the chicken, making sure to get under the skin as well.
- Place the lemon halves inside the cavity of the chicken.
- Tie the legs together with kitchen twine and tuck the wings under the body of the chicken to prevent them from burning.
- Place the chicken breast side up on a roasting pan or baking dish.
- Roast the chicken in the preheated oven for about 1 hour and 15 minutes to 1 hour and 30 minutes, or until the internal temperature reaches 165°F (75°C) and the juices run clear when pierced with a knife.
- Once cooked, remove the chicken from the oven and let it rest for 10-15 minutes before carving.
- Carve the chicken into serving pieces and serve hot with your favorite side dishes.
Enjoy your delicious herb-roasted chicken straight from the oven!
