  • 1 pound ground beef
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup breadcrumbs
  • 1/4 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 4 cups mashed potatoes (homemade or store-bought)
  • 1 cup shredded cheddar cheese
  • Chopped fresh parsley, for garnish (optional)

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish and set aside.
  2. In a large mixing bowl, combine the ground beef, chopped onion, minced garlic, breadcrumbs, ketchup, Worcestershire sauce, dried thyme, paprika, salt, and pepper. Mix until well combined.
  3. Press the meatloaf mixture evenly into the bottom of the prepared baking dish, forming a layer.
  4. Spread the mashed potatoes evenly over the meatloaf layer, smoothing it out with a spatula.
  5. Sprinkle the shredded cheddar cheese over the mashed potatoes, covering the entire surface.
  6. Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
  7. After 30 minutes, remove the foil and continue baking for an additional 15-20 minutes, or until the cheese is melted and bubbly, and the meatloaf is cooked through.
  8. Once done, remove from the oven and let it cool slightly before serving.
  9. Garnish with chopped fresh parsley, if desired, before serving.
