  • 2 cups heavy cream

  3. Slowly pour a ladleful of the hot cream mixture into the bowl with the egg yolks, whisking continuously to temper the eggs and prevent them from scrambling.
  4. Gradually pour the tempered egg mixture back into the saucepan with the remaining cream mixture, stirring constantly.
  5. Cook the mixture over medium-low heat, stirring constantly with a wooden spoon or silicone spatula, until it thickens enough to coat the back of the spoon. This should take about 8-10 minutes. Do not let it boil.

  8. Cover the bowl with plastic wrap, making sure the plastic wrap touches the surface of the custard to prevent a skin from forming.

  10. Once chilled, transfer the custard to an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.
