Ingredients:

  • 4 boneless pork chops
  • 1 tablespoon olive oil
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup chicken broth
  • 1/2 cup balsamic vinegar
  • 2 tablespoons honey
  • 2 tablespoons soy sauce
  • 2 tablespoons cornstarch (optional, for thickening)

Directions:

  1. Season the pork chops with salt, pepper, dried thyme, dried rosemary, and paprika on both sides.
  2. Heat olive oil in a skillet over medium-high heat. Brown the pork chops for 2-3 minutes on each side until golden brown. Remove from the skillet and set aside.
  3. In the same skillet, add the sliced onion and minced garlic. Cook for 2-3 minutes until softened and fragrant.
  4. Transfer the onion and garlic mixture to the slow cooker. Place the browned pork chops on top.
  5. In a small bowl, mix together chicken broth, balsamic vinegar, honey, and soy sauce. Pour the mixture over the pork chops in the slow cooker.
  6. Cover and cook on low heat for 4-6 hours, or until the pork chops are tender and cooked through.
  7. If desired, you can thicken the sauce before serving. In a small bowl, mix cornstarch with a few tablespoons of cold water until smooth. Stir the cornstarch mixture into the slow cooker during the last 30 minutes of cooking.
  8. Once the pork chops are cooked, serve them hot with the flavorful sauce spooned over the top. Enjoy with your favorite side dishes, such as mashed potatoes or steamed vegetables.

Note: Cooking times may vary depending on your slow cooker model and the thickness of the pork chops. Adjust accordingly.
