Indulge in a comforting twist on traditional lasagna with this creamy chicken version. Layers of tender chicken, creamy sauce, and melted cheese make this dish a family favorite.
Ingredients:
- 9 lasagna noodles
- 2 cups cooked chicken, shredded or diced
- 2 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 onion, diced
- 1 tablespoon olive oil
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 cups chicken broth
- 1 cup heavy cream
- 1/2 cup all-purpose flour
- 1/4 cup butter
Directions:
- Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish and set aside.
- Cook the lasagna noodles according to the package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and diced onion, and sauté until softened and fragrant, about 3-4 minutes.
- Add the cooked chicken to the skillet along with the dried basil, oregano, thyme, salt, and pepper. Cook for another 2-3 minutes until the chicken is heated through and well-coated with the herbs and spices. Remove from heat and set aside.
- In a separate saucepan, melt the butter over medium heat. Once melted, whisk in the flour to create a roux. Cook, whisking constantly, for 1-2 minutes until the roux is golden brown.
- Gradually whisk in the chicken broth and heavy cream until smooth. Bring the mixture to a simmer, stirring constantly, until it thickens, about 5-7 minutes.
- To assemble the lasagna, spread a thin layer of the creamy sauce on the bottom of the prepared baking dish. Arrange 3 lasagna noodles over the sauce, followed by half of the chicken mixture. Sprinkle with a third of the mozzarella and Parmesan cheeses. Repeat the layers, ending with a final layer of sauce and cheese on top.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden brown.
