Cozy Classic Beef Stew Recipe

Ingredients:

  • 2 lbs (900g) beef stew meat, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 carrots, peeled and sliced
  • 4 potatoes, peeled and diced
  • 2 celery stalks, chopped
  • 4 cups (946ml) beef broth
  • 1 cup (240ml) red wine (optional)
  • 2 tablespoons tomato paste
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Directions:

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add the beef stew meat and cook until browned on all sides, about 5-7 minutes. Remove the beef from the pot and set aside.
  2. In the same pot, add chopped onion and garlic. Cook until softened, about 3-4 minutes.
  3. Add carrots, potatoes, and celery to the pot. Cook for another 5 minutes, stirring occasionally.
  4. Return the browned beef to the pot. Pour in beef broth and red wine (if using). Stir in tomato paste, bay leaves, dried thyme, salt, and pepper.
  5. Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, or until the beef is tender and the vegetables are cooked through.
  6. Taste and adjust seasoning if necessary. Remove bay leaves before serving.
