Ingredients:
- 2 lbs (900g) beef stew meat, cut into bite-sized pieces
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 carrots, peeled and sliced
- 4 potatoes, peeled and diced
- 2 celery stalks, chopped
- 4 cups (946ml) beef broth
- 1 cup (240ml) red wine (optional)
- 2 tablespoons tomato paste
- 2 bay leaves
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Directions:
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Add the beef stew meat and cook until browned on all sides, about 5-7 minutes. Remove the beef from the pot and set aside.
- In the same pot, add chopped onion and garlic. Cook until softened, about 3-4 minutes.
- Add carrots, potatoes, and celery to the pot. Cook for another 5 minutes, stirring occasionally.
- Return the browned beef to the pot. Pour in beef broth and red wine (if using). Stir in tomato paste, bay leaves, dried thyme, salt, and pepper.
- Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, or until the beef is tender and the vegetables are cooked through.
- Taste and adjust seasoning if necessary. Remove bay leaves before serving.
