Chile Relleno Casserole Recipe

  • 6 large poblano peppers
  • 2 cups shredded Monterey Jack cheese
  • 1 cup shredded sharp cheddar cheese
  • 6 large eggs
  • 1 cup milk
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • Optional toppings: salsa, sour cream, chopped cilantro


  1. Preheat your oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish.
  2. Place poblano peppers on a baking sheet and roast in the preheated oven for about 20-25 minutes, turning occasionally, until the skins are charred and blistered.
  3. Transfer the roasted peppers to a large bowl and cover with plastic wrap. Let them steam for about 10 minutes. This will help loosen the skins.
  4. Once cooled slightly, peel off the skins from the peppers. Slice each pepper open lengthwise and remove the seeds and membranes.
  5. In a small bowl, mix together the flour, baking powder, salt, black pepper, cumin, paprika, and garlic powder.
  6. In another bowl, whisk together the eggs and milk until well combined.
  7. Spread half of the roasted poblano peppers evenly in the bottom of the prepared baking dish.
  8. Sprinkle half of the shredded Monterey Jack and cheddar cheeses over the peppers.
  9. Sprinkle half of the flour mixture over the cheese layer.
  10. Repeat the layers with the remaining peppers, cheese, and flour mixture.
  11. Pour the egg mixture evenly over the top of the casserole.
  12. Bake in the preheated oven for 35-40 minutes, or until the eggs are set and the top is golden brown.
  13. Remove from the oven and let it cool for a few minutes before serving.
