Ingredients:
- 6 large poblano peppers
- 2 cups shredded Monterey Jack cheese
- 1 cup shredded sharp cheddar cheese
- 6 large eggs
- 1 cup milk

- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon ground cumin

Directions:
- Preheat your oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish.
- Place poblano peppers on a baking sheet and roast in the preheated oven for about 20-25 minutes, turning occasionally, until the skins are charred and blistered.
