Ingredients:

  • 1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, cut into chunks
  • 1 green bell pepper, cut into chunks
  • 1 zucchini, sliced
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon ground coriander
  • Salt and pepper to taste
  • Wooden skewers, soaked in water for 30 minutes

For the Rice:

  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 tablespoon butter
  • Salt to taste
  • Chopped fresh parsley for garnish (optional)

Directions:

  1. In a bowl, combine the chicken pieces, chopped onion, minced garlic, olive oil, ground cumin, paprika, ground coriander, salt, and pepper. Mix well to coat the chicken evenly with the spices. Cover and refrigerate for at least 30 minutes to marinate.
  2. While the chicken is marinating, prepare the rice. In a medium saucepan, bring the chicken broth to a boil. Stir in the rice, butter, and salt. Reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed. Fluff the rice with a fork and set aside.
  3. Preheat the grill or grill pan over medium-high heat.
  4. Thread the marinated chicken pieces onto the soaked wooden skewers, alternating with the bell peppers and zucchini slices.
  5. Grill the kebabs for 8-10 minutes, turning occasionally, until the chicken is cooked through and lightly charred on the outside.
  6. Serve the grilled chicken kebabs hot with the cooked rice, garnished with chopped fresh parsley if desired.

Enjoy your delicious chicken kebabs with rice!
