Ingredients:
- 1 lb beef sirloin tips, cut into bite-sized pieces
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 8 oz mushrooms, sliced (any variety you prefer)
- 1 cup beef broth
- 1/2 cup heavy cream
- 2 tablespoons all-purpose flour
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions:
- In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the beef tips and cook until browned on all sides, about 5-7 minutes. Remove the beef from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of olive oil. Add the diced onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for an additional 1 minute.
- Add the sliced mushrooms to the skillet and cook until they are tender and browned, about 5 minutes.
- Sprinkle the flour over the mushroom mixture and stir to coat. Cook for 1-2 minutes to cook out the raw flour taste.
- Slowly pour in the beef broth, stirring constantly to prevent lumps from forming. Bring the mixture to a simmer and cook until it thickens slightly, about 5 minutes.
- Stir in the heavy cream and season with salt and pepper to taste. Return the beef tips to the skillet and simmer for an additional 5-7 minutes, or until the beef is heated through and the sauce has thickened to your desired consistency.
- Serve the beef tips and mushroom sauce hot, garnished with fresh parsley if desired. Enjoy with mashed potatoes, rice, or your favorite side dish.
