Homemade Sponge Cake Recipe

  • 4 large eggs
  • 1 cup (200g) granulated sugar
  • 1 cup (120g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 tablespoons (30ml) milk


  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
  2. Separate the egg yolks from the whites. Place the egg whites in a clean, dry mixing bowl.
  3. Using an electric mixer, beat the egg whites on high speed until soft peaks form.
  4. Gradually add half of the sugar (1/2 cup) to the egg whites while continuing to beat until stiff peaks form. Set aside.
  5. In another mixing bowl, beat the egg yolks with the remaining sugar (1/2 cup) until thick and pale yellow in color.
  6. Add the vanilla extract and milk to the egg yolk mixture, and beat until well combined.
  7. In a separate bowl, sift together the flour, baking powder, and salt.
  8. Gently fold the flour mixture into the egg yolk mixture until just combined. Be careful not to overmix.
  9. Gradually fold the beaten egg whites into the batter, using a spatula, until no white streaks remain.
  10. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  11. Bake in the preheated oven for 25-30 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out clean.
  12. Remove the cake from the oven and let it cool in the pan for 10 minutes. Then, carefully transfer it to a wire rack to cool completely.
