Ingredients:
- 4 large eggs
- 1 cup (200g) granulated sugar
- 1 cup (120g) all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 2 tablespoons (30ml) milk
Instructions:
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
- Separate the egg yolks from the whites. Place the egg whites in a clean, dry mixing bowl.
- Using an electric mixer, beat the egg whites on high speed until soft peaks form.
- Gradually add half of the sugar (1/2 cup) to the egg whites while continuing to beat until stiff peaks form. Set aside.
- In another mixing bowl, beat the egg yolks with the remaining sugar (1/2 cup) until thick and pale yellow in color.
- Add the vanilla extract and milk to the egg yolk mixture, and beat until well combined.
- In a separate bowl, sift together the flour, baking powder, and salt.
- Gently fold the flour mixture into the egg yolk mixture until just combined. Be careful not to overmix.
- Gradually fold the beaten egg whites into the batter, using a spatula, until no white streaks remain.
- Pour the batter into the prepared cake pan and smooth the top with a spatula.
