This recipe is perfect for when you’re craving a delicious and refreshing treat, but don’t have a lot of time or ingredients on hand. With just 3 simple ingredients, you can whip up a batch of homemade ice cream in minutes!
Ingredients:
- 2 cups heavy whipping cream, cold
- 1 (14 oz) can sweetened condensed milk
- 1 tablespoon pure vanilla extract (or to taste)
- (Optional) ½ to 1 cup of your favorite mix-ins (chocolate chips, chopped nuts, fruit, etc.)
Instructions:
- In a large bowl, using an electric mixer, beat the heavy whipping cream on high speed until stiff peaks form. Be careful not to overbeat, or the cream will turn into butter!
- Gently fold in the sweetened condensed milk and vanilla extract with a spatula until just combined. Be careful not to deflate the whipped cream.
- If using mix-ins, fold them in gently at this time.
- Pour the ice cream mixture into a loaf pan or airtight container. Cover and freeze for at least 4-6 hours, or until firm.
- Let the ice cream soften slightly at room temperature for a few minutes before scooping. Enjoy!
Tips:
- For a richer flavor, use full-fat coconut milk instead of heavy whipping cream.
- Get creative with your mix-ins! Try chopped cookies, cocoa powder for chocolate ice cream, or swirl in some fruit puree.
- If you don’t have an electric mixer, you can whip the cream by hand, but it will take longer and require more effort.
- For a creamier texture, whisk the ice cream a couple of times during the freezing process to break up ice crystals.
