These milk brioche rolls are incredibly soft and fluffy, with a rich, buttery flavor. Perfect for holidays, special occasions, or just a delightful side dish!


  • 3 ¾ cups all-purpose flour (or bread flour)
  • 2 teaspoons instant yeast
  • 1 teaspoon sea salt
  • 2 tablespoons granulated sugar
  • 2 large whole eggs + 2 egg yolks, at room temperature (reserve 1 egg white for egg wash)
  • ½ cup whole milk, warmed to 110°F (plus 1 tablespoon for egg wash)
  • ½ cup unsalted butter, at room temperature


  1. Make the Dough: In the bowl of a stand mixer fitted with the dough hook attachment, combine the flour, salt, sugar, and instant yeast. Whisk together the eggs, egg yolks, and warmed milk. Pour the wet ingredients into the dry ingredients and mix on low speed until a shaggy dough forms.
  2. Incorporate the Butter: Increase the mixer speed to medium-low and gradually add the softened butter, one piece at a time, until fully incorporated. Continue kneading for 15-20 minutes, or until the dough becomes smooth and elastic. You can also perform the windowpane test: pull a small piece of dough and stretch it thinly. If it stretches translucently without tearing, the dough is kneaded enough.
  3. First Rise: Lightly oil a large bowl. Transfer the dough to the greased bowl, turning to coat. Cover the bowl with plastic wrap and let the dough rise in a warm place for 1-2 hours, or until doubled in size.
  4. Shape the Rolls: Punch down the dough and transfer it to a lightly floured surface. Gently roll the dough into a 12×16 inch rectangle. Cut the dough into 12 equal squares. Roll each square into a tight ball.
  5. Second Rise: Arrange the dough balls in a greased 9×13 inch baking dish, leaving space in between for them to rise. Cover the dish loosely with plastic wrap and let the rolls rise for another 30-45 minutes, or until nearly doubled in size.
  6. Egg Wash and Bake: Preheat your oven to 375°F (190°C). In a small bowl, whisk together the reserved egg white and 1 tablespoon of milk for the egg wash. Brush the tops of the rolls gently with the egg wash. Bake the rolls for 20-25 minutes, or until golden brown.
  7. Serve and Enjoy! Let the rolls cool slightly before serving. Enjoy them warm or at room temperature, slathered with butter or your favorite jam.
