Ingredients:
- 1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces
- 1/2 cup cornstarch
- 2 tablespoons vegetable oil
- 1 green bell pepper, cut into chunks
- 1 red bell pepper, cut into chunks
- 1 onion, cut into chunks
- Pineapple chunks (optional, for added sweetness)
For the Sweet and Sour Sauce:
- 1/2 cup ketchup
- 1/4 cup rice vinegar
- 1/4 cup brown sugar
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch
- 1 teaspoon minced garlic
- 1 teaspoon minced ginger
- 1/4 cup water
Directions:
- In a small bowl, whisk together all the ingredients for the sweet and sour sauce until well combined. Set aside.
