Ingredients:

  • 1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1/2 cup cornstarch
  • 2 tablespoons vegetable oil
  • 1 green bell pepper, cut into chunks
  • 1 red bell pepper, cut into chunks
  • 1 onion, cut into chunks
  • Pineapple chunks (optional, for added sweetness)

For the Sweet and Sour Sauce:

  • 1/2 cup ketchup
  • 1/4 cup rice vinegar
  • 1/4 cup brown sugar
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 1 teaspoon minced garlic
  • 1 teaspoon minced ginger
  • 1/4 cup water

Directions:

  1. In a small bowl, whisk together all the ingredients for the sweet and sour sauce until well combined. Set aside.
  2. Place the chicken pieces in a large bowl and toss with cornstarch until evenly coated.
