Super Fluffy Homemade Muffins Recipe

This recipe is guaranteed to yield perfectly light and fluffy muffins that are sure to become a breakfast favorite!

Ingredients:

  • 1 1/3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 1/2 cup milk (whole milk or buttermilk recommended)

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl using a hand mixer or stand mixer fitted with the paddle attachment, cream together the melted butter and sugar on medium speed for about 3 minutes until light and fluffy. Scrape down the sides and bottom of the bowl as needed.
  4. On medium speed, beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract until just combined.
  5. With the mixer on low speed, alternately add the dry ingredients and milk in three batches, beginning and ending with the dry ingredients. Mix just until combined, being careful not to overmix.
  6. Fill the prepared muffin cups batter until about 3/4 full.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

Tips:

  • For extra fluffy muffins, separate the eggs and beat the egg whites to stiff peaks before gently folding them into the batter.
  • Don’t overmix the batter! Once the dry ingredients are just incorporated, stop mixing. Overmixing will lead to tough muffins.
  • To add a streusel topping, combine 1/4 cup flour, 2 tablespoons brown sugar, and a pinch of salt. Cut in 2 tablespoons of cold butter using a pastry cutter or your fingertips until crumbly. Sprinkle the streusel over the muffin batter before baking.
  • Let the batter rest for 10 minutes before baking. This allows the gluten to relax, resulting in a lighter and fluffier muffin.
