Ingredients

For the Cake:

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup whole milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup pureed fresh strawberries (about 1/2 cup strawberries blended)

For the Strawberry Frosting:

  • 1 cup unsalted butter, softened
  • 3-4 cups powdered sugar, sifted
  • 1/4 cup heavy cream
  • 1/4 cup pureed fresh strawberries
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. Prepare the Cake:
  2. Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
  3. In a medium bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  4. In a large bowl, beat the butter until creamy. Add the milk, eggs, and vanilla extract, and beat until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  6. Fold in the pureed strawberries until evenly distributed.
  7. Divide the batter evenly between the prepared pans and smooth the tops with a spatula.
  8. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  10. Make the Frosting:
  11. In a large bowl, beat the butter until creamy.
  12. Gradually add 3 cups of powdered sugar, beating on low speed until combined. Increase speed to medium and beat until light and fluffy.
  13. Add the heavy cream, pureed strawberries, vanilla extract, and a pinch of salt. Beat until well combined.
  14. If the frosting is too soft, add more powdered sugar, 1/4 cup at a time, until you reach the desired consistency. If it’s too stiff, add a little more heavy cream.
  15. Assemble the Cake:
  16. Place one cake layer on a serving plate or cake stand.
  17. Spread a layer of strawberry frosting over the top.
  18. Place the second cake layer on top and frost the top and sides of the cake with the remaining frosting.
  19. Decorate with fresh strawberries or additional frosting decorations as desired.
  20. Serve and Enjoy:
  • Slice and serve the cake at room temperature. Enjoy the delightful strawberry flavor in every bite!
