Smoked Jalapeno Popper Chicken Recipe

This recipe combines the smoky goodness of your smoker with the classic flavors of a jalapeno popper, all wrapped up in a juicy chicken breast.

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 8 jalapenos, medium size
  • 8 oz cream cheese, softened
  • 4 oz shredded cheddar cheese
  • 1/4 cup chopped red onion
  • 1 tablespoon chopped fresh cilantro
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • Salt and black pepper to taste
  • 12 slices bacon
  • Wood chips for smoking (fruit woods or hickory recommended)

Instructions:

  1. Prep the smoker: Preheat your smoker to 225°F (107°C) and add your chosen wood chips.
  2. Prepare the jalapenos: Halve the jalapenos lengthwise and remove the seeds and ribs. Wear gloves if you have sensitive skin to avoid any spice burn.
  3. Make the filling: In a medium bowl, combine softened cream cheese, cheddar cheese, red onion, cilantro, chili powder, smoked paprika, garlic powder, salt, and pepper. Mix well until everything is incorporated.
  4. Stuff the jalapenos: Fill each jalapeno half with the cream cheese mixture, packing it in tightly.
  5. Prepare the chicken: Using a sharp knife, carefully cut a pocket into each chicken breast, without cutting all the way through. Season the chicken breasts with salt and pepper.
  6. Assemble the chicken: Place a stuffed jalapeno popper inside each chicken pocket. Fold the chicken over to enclose the filling.
  7. Wrap with bacon: Wrap each stuffed chicken breast with 3 slices of bacon, securing the ends with toothpicks if needed.
  8. Smoke the chicken: Place the bacon-wrapped chicken breasts on your smoker and cook for 1-1/2 to 2 hours, or until the internal temperature of the chicken reaches 165°F (74°C). Baste the chicken with your favorite BBQ sauce during the last 30 minutes of cooking for an extra layer of flavor (optional).
  9. Rest and serve: Once cooked through, remove the chicken from the smoker and let it rest for 10 minutes before slicing and serving. Enjoy the smoky flavors and the creamy, spicy filling of your delicious smoked jalapeno popper chicken!
