Ingredients:
- 4 large eggs
- 4 sausages (any variety you prefer, such as pork, chicken, or turkey)
- 1/2 cup shredded cheddar cheese
- 1/4 cup diced onion
- 1/4 cup diced bell pepper
- 2 tablespoons chopped fresh parsley
- Salt and pepper to taste
- 1 tablespoon olive oil
Directions:
- Heat olive oil in a skillet over medium heat.
- Remove the sausage from its casing and cook it in the skillet, breaking it into small pieces with a spatula as it cooks. Cook until the sausage is browned and cooked through, about 5-7 minutes.
- While the sausage is cooking, beat the eggs in a bowl until well mixed. Season with salt and pepper.
- Once the sausage is cooked, remove it from the skillet and set it aside.
- In the same skillet, add diced onion and bell pepper. Cook until softened, about 3-4 minutes.
- Pour the beaten eggs into the skillet over the cooked onions and peppers. Let the eggs cook undisturbed for a minute or two until the edges start to set.
- Sprinkle the cooked sausage pieces evenly over the eggs.
- Using a spatula, gently lift the edges of the omelette and tilt the skillet to allow the uncooked egg to flow underneath.
- Once the eggs are mostly set but still slightly runny on top, sprinkle shredded cheese and chopped parsley over one half of the omelette.
- Carefully fold the other half of the omelette over the filling to form a half-moon shape. Press down gently with the spatula to seal.
