Sausage Omelette Recipe

This delicious sausage omelette is perfect for a hearty breakfast or brunch. Packed with savory flavors and protein, it’s sure to satisfy your hunger and fuel your day.


  • 4 large eggs
  • 4 sausages (any variety you prefer, such as pork, chicken, or turkey)
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup diced onion
  • 1/4 cup diced bell pepper
  • 2 tablespoons chopped fresh parsley
  • Salt and pepper to taste
  • 1 tablespoon olive oil


  1. Heat olive oil in a skillet over medium heat.
  2. Remove the sausage from its casing and cook it in the skillet, breaking it into small pieces with a spatula as it cooks. Cook until the sausage is browned and cooked through, about 5-7 minutes.
  3. While the sausage is cooking, beat the eggs in a bowl until well mixed. Season with salt and pepper.
  4. Once the sausage is cooked, remove it from the skillet and set it aside.
  5. In the same skillet, add diced onion and bell pepper. Cook until softened, about 3-4 minutes.
  6. Pour the beaten eggs into the skillet over the cooked onions and peppers. Let the eggs cook undisturbed for a minute or two until the edges start to set.
  7. Sprinkle the cooked sausage pieces evenly over the eggs.
  8. Using a spatula, gently lift the edges of the omelette and tilt the skillet to allow the uncooked egg to flow underneath.
  9. Once the eggs are mostly set but still slightly runny on top, sprinkle shredded cheese and chopped parsley over one half of the omelette.
  10. Carefully fold the other half of the omelette over the filling to form a half-moon shape. Press down gently with the spatula to seal.
  11. Cook for another minute or until the cheese is melted and the omelette is cooked through to your desired doneness.
