For the Dough:

  • 4 cups (480g) all-purpose flour
  • 2 ¼ tsp (1 packet) active dry yeast
  • 1 cup (240ml) warm milk (about 110°F or 43°C)
  • ¼ cup (50g) granulated sugar
  • 1 tsp salt
  • 4 tbsp (60g) unsalted butter, melted
  • 1 large egg

For the Topping:

  • 2 tbsp (30ml) milk
  • 1 tbsp (15g) poppy seeds


  1. Prepare the Yeast:
    • In a small bowl, combine the warm milk and sugar. Sprinkle the yeast over the mixture and let it sit for about 5-10 minutes until it becomes frothy.
  2. Mix the Dough:
    • In a large mixing bowl, combine the flour and salt. Make a well in the center and add the yeast mixture, melted butter, and egg.
    • Mix until a soft dough forms. You can use a stand mixer with a dough hook attachment or knead by hand.
  3. Knead the Dough:
    • Knead the dough on a lightly floured surface for about 8-10 minutes until it is smooth and elastic.
    • Alternatively, if using a stand mixer, knead on medium speed for about 5-7 minutes.
  4. First Rise:
    • Place the dough in a greased bowl, turning it to coat all sides with oil. Cover the bowl with a clean kitchen towel or plastic wrap.
    • Let the dough rise in a warm, draft-free area for about 1-2 hours or until it has doubled in size.

    • Punch down the risen dough to release the air. Divide it into 12 equal pieces.
    • Shape each piece into a ball by pulling the edges under and pinching them together at the bottom.
    • Place the shaped rolls on a parchment-lined baking sheet, spaced about 2 inches apart.

    • Cover the rolls with a kitchen towel and let them rise for another 30-45 minutes until they have doubled in size.
  7. Prepare for Baking:
    • Preheat the oven to 375°F (190°C).
    • Brush the tops of the rolls with milk and sprinkle generously with poppy seeds.
  8. Bake the Rolls:
    • Bake in the preheated oven for 15-20 minutes or until the rolls are golden brown and sound hollow when tapped on the bottom.
    • If the tops are browning too quickly, you can cover them loosely with aluminum foil halfway through baking.
