Pioneer Woman Cowboy Quiche Recipe

This hearty quiche is packed with flavor, making it a perfect breakfast, brunch, or even dinner option.

  • 1 unbaked deep-dish pie crust (homemade or store-bought)
  • 2 yellow onions, thinly sliced
  • 2 tablespoons butter
  • 8 slices bacon, cooked and chopped
  • 8 large eggs
  • 1 1/2 cups heavy cream or half-and-half
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups grated sharp cheddar cheese

  1. Caramelize the Onions: In a large skillet over medium-low heat, melt the butter. Add the sliced onions and cook for 15-20 minutes, stirring occasionally, until the onions are deeply golden brown. Set aside to cool slightly.
  2. Cook the Bacon: While the onions cook, fry the bacon in a separate pan until crisp. Remove from heat, let cool slightly, then chop into bite-sized pieces.
  3. Preheat the Oven: Preheat your oven to 400°F (200°C).
  4. Assemble the Quiche: Press the pie crust into a deep-dish pie pan. In a large bowl, whisk together the eggs, cream, salt, and pepper. Stir in the cooled onions, chopped bacon, and grated cheese. Pour the mixture into the prepared pie crust.
  5. Bake the Quiche: Bake the quiche for 45 minutes, tented loosely with foil placed on a baking sheet. This helps prevent the crust from burning. After 45 minutes, remove the foil and continue baking for an additional 10-15 minutes, or until the quiche is set and the crust is golden brown.
  6. Cool and Serve: Let the quiche cool for at least 10 minutes before slicing and serving. Enjoy!
