Pineapple Quick Bread Recipe

This delicious and easy pineapple quick bread is bursting with tropical flavor! Perfect for a sweet snack or afternoon tea.


  • 1 ½ cups all-purpose flour
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • ½ cup (1 stick) softened butter
  • ¼ cup granulated sugar
  • 2 large eggs
  • 1 (15 oz) can crushed pineapple, drained (reserve ¼ cup juice)
  • 2 tablespoons milk


  1. Preheat oven to 350°F (175°C). Grease and flour a loaf pan (9×5 inch).
  2. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream together softened butter and sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in vanilla extract.
  5. Add the drained crushed pineapple and reserved pineapple juice to the wet ingredients.
  6. Alternately add the dry ingredients and milk to the wet mixture, beginning and ending with the dry ingredients. Mix until just combined, be careful not to overmix.
  7. Pour batter into the prepared loaf pan and bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  9. (Optional) Drizzle with a simple glaze made by mixing powdered sugar and a little bit of pineapple juice until smooth.


  • For a richer flavor, substitute brown sugar for half of the granulated sugar.
  • Add chopped nuts or coconut flakes for extra texture.
  • This bread is also delicious served warm with a scoop of vanilla ice cream.
