No-Bake Cheesecake Bars Recipe

This recipe is a perfect way to enjoy a delicious and refreshing cheesecake without heating up the kitchen!


  • For the Crust:
    • 1 ½ cups graham cracker crumbs
    • ¼ cup unsalted butter, melted
    • ¼ cup granulated sugar
  • For the Cheesecake Filling:
    • 16 oz cream cheese, softened
    • 14 oz sweetened condensed milk
    • 2 tbsp lemon juice
    • 1 tsp vanilla extract
    • ½ tsp salt
    • ½ cup heavy cream


  1. Prepare the Crust:
    • Line an 8×8 inch baking pan with parchment paper.
    • In a bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until well combined and resembles wet sand.
    • Press the crumb mixture firmly and evenly into the bottom of the prepared pan.
    • Place the crust in the freezer to set for 15 minutes.
  2. Make the Cheesecake Filling:
    • In a large mixing bowl, using an electric mixer, beat the softened cream cheese until smooth and creamy.
    • Gradually add the sweetened condensed milk while beating on low speed until fully incorporated.
    • Beat in the lemon juice, vanilla extract, and half the salt until well combined.
  3. Whip the Cream and Fold In:
    • In a separate bowl, using an electric mixer with whisk attachment, whip the heavy cream on high speed until stiff peaks form.
    • Gently fold the whipped cream into the cheesecake mixture using a spatula until just combined. Be careful not to overmix.
  4. Assemble and Chill:
    • Take the crust out of the freezer and pour the cheesecake filling on top.
    • Spread the filling evenly using a spatula.
    • Cover the pan with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.
  5. Serve and Enjoy!
    • When ready to serve, take the pan out of the fridge and let it sit for 15 minutes at room temperature.
