No-Bake Cheesecake Bars Recipe

This recipe is a breeze to make and requires no baking! Perfect for a refreshing summer dessert.


  • For the Graham Cracker Crust:
    • 1 1/2 cups graham cracker crumbs
    • 1/4 cup unsalted butter, melted
    • 1/4 cup granulated sugar
  • For the Cheesecake Filling:
    • 16 oz cream cheese, softened at room temperature
    • 1 1/2 cups powdered sugar
    • 1 tsp vanilla extract
    • 1/2 cup heavy whipping cream


  1. Prepare the Crust:
    • In a bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined and resembles wet sand.
    • Press the mixture firmly into the bottom of an 8×8 inch baking pan lined with parchment paper (leave a 2-inch overhang for easy removal).
    • Freeze the crust for at least 30 minutes.
  2. Make the Cheesecake Filling:
    • In a large bowl using an electric mixer, beat the softened cream cheese until smooth and creamy.
    • Gradually add the powdered sugar and vanilla extract, beating until well combined and light and fluffy.
    • In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture using a rubber spatula.
  3. Assemble and Chill:
    • Pour the cheesecake filling over the chilled crust.
    • Smooth the top with a spatula.
    • Refrigerate the cheesecake bars for at least 6 hours, or overnight, until set.

    • Once chilled, remove the cheesecake bars from the pan using the parchment paper overhang.
