This recipe creates a delightful lime bundt cake, bursting with citrus flavor and topped with a tangy cream cheese frosting.

  • For the Cake:
    • 3 cups all-purpose flour
    • 2 teaspoons baking powder
    • 1/2 teaspoon salt
    • 1 ½ cups unsalted butter, softened
    • 1 cup (2 sticks) cream cheese, softened
    • 2 cups granulated sugar
    • 4 large eggs
    • ½ cup key lime juice (or regular lime juice)
    • 3 tablespoons grated lime zest
    • 2 tablespoons canola oil
  • For the Cream Cheese Frosting:
    • 8 ounces cream cheese, softened
    • ½ cup unsalted butter, softened
    • 3 cups powdered sugar
    • 2-3 tablespoons lime juice
    • 1 teaspoon vanilla extract
    • Lime zest, for garnish (optional)

  1. Preheat the oven to 325°F (163°C). Grease and flour a Bundt pan.
  2. Whisk dry ingredients: In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. Cream butter and cheese: In a large bowl using an electric mixer, cream together the softened butter and cream cheese until light and fluffy, about 3 minutes.
  4. Gradually add sugar: Gradually add the sugar to the creamed mixture and beat on medium-high speed until light and airy, about 3 minutes.
  5. Incorporate eggs one at a time: Beat in the eggs one at a time, scraping down the sides of the bowl after each addition.
  6. Add lime flavorings: Stir in the lime juice and lime zest.
  7. Alternate wet and dry ingredients: Add the dry ingredients to the wet ingredients in three batches, alternating with the canola oil, beginning and ending with the dry ingredients. Mix until just combined, be careful not to overmix.
  8. Pour batter and bake: Pour the batter into the prepared Bundt pan and bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  9. Cool the cake: Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
  10. Make the frosting: While the cake cools, beat the softened cream cheese and butter in a bowl until smooth. Gradually add the powdered sugar and mix until incorporated. Beat in the lime juice and vanilla extract until the frosting reaches desired consistency.
  11. Frost the cake: Once the cake is completely cool, frost the top and sides with the cream cheese frosting. Garnish with additional lime zest, if desired.
