Lemon Cream Cheese Brownies Bars Recipe

These decadent bars combine the rich chocolate of brownies with a tangy lemon cream cheese layer for a delightful and refreshing dessert.

  • For the Brownie Layer:
    • ¾ cup all-purpose flour
    • ¾ cup granulated sugar
    • 1 stick (8 tablespoons) unsalted butter, softened
    • ¾ cup cream cheese, softened
    • 2 large eggs
    • 3 tablespoons lemon juice
    • 3-4 drops yellow food coloring (optional)
  • For the Lemon Cream Cheese Layer:
    • 8 ounces cream cheese, softened
    • ½ cup powdered sugar
    • 1 tablespoon lemon juice
  • For the Topping (Optional):
    • Powdered sugar
    • Lemon zest

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper for easy removal.
  2. Make the Brownie Layer: In a large bowl, whisk together the flour and sugar. Using an electric mixer, cream together the softened butter and cream cheese until light and fluffy. Beat in the eggs one at a time, then stir in the lemon juice and food coloring (if using). Gradually add the dry ingredients to the wet ingredients until just combined.
  3. Pour the brownie batter into the prepared pan and bake for 20-25 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
  4. While the brownies bake, make the Lemon Cream Cheese Layer: In a separate bowl, beat together the softened cream cheese, powdered sugar, and lemon juice until smooth and creamy.
  5. Once the brownies are done baking, remove them from the oven and let them cool completely on a wire rack. Spread the lemon cream cheese layer evenly over the cooled brownie base.
  6. Optional Topping: Sprinkle the top of the bars with powdered sugar and lemon zest for an extra burst of lemon flavor.
  7. Refrigerate the bars for at least 2 hours, or until the cream cheese layer is firm, before cutting into squares and serving.
