Lemon Cream Cheese Bars Recipe

These tangy and creamy lemon cream cheese bars are perfect for a refreshing summer treat. They’re surprisingly easy to make and come together with a simple crust and a luscious lemon filling.

  • For the Crust:
    • 2 (8 ounce) packages refrigerated crescent roll dough (such as Pillsbury® Recipe Creations®)
    • 2 tablespoons butter, melted
    • 3 tablespoons granulated sugar
    • Zest of 1 lemon
  • For the Filling:
    • 2 (8 ounce) packages cream cheese, softened
    • ½ cup granulated sugar
    • 3 large eggs
    • ¾ cup fresh lemon juice
    • ¼ cup all-purpose flour
    • ⅓ cup powdered sugar
    • 1 teaspoon vanilla extract

  1. Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Lightly grease a 9×13 inch baking dish.
  2. Prepare the Crust: Unroll one package of crescent roll dough and press it evenly into the bottom of your prepared baking dish. In a small bowl, combine the melted butter, 3 tablespoons of sugar, and lemon zest. Sprinkle this mixture over the pressed dough.
  3. Bake the Crust: Bake the crust for 10 minutes, or until lightly golden brown. Remove from the oven and let cool slightly while you prepare the filling.
  4. Make the Filling: In a large bowl, beat together the softened cream cheese and ½ cup of granulated sugar until smooth and creamy. Beat in the eggs one at a time, then stir in the lemon juice, flour, powdered sugar, and vanilla extract until well combined.
  5. Assemble the Bars: Pour the lemon filling over the cooled crust. Bake for 30-35 minutes, or until the filling is set but still has a slight jiggle in the center.
  6. Chill and Serve: Let the bars cool completely at room temperature, then refrigerate for at least 4 hours or overnight. Once chilled, cut into squares and dust with additional powdered sugar for serving.
