Italian Drunken Noodles Recipe

Italian Drunken Noodles are a delicious twist on the classic Thai dish, combining Italian flavors with the spicy, savory goodness of the original. This dish features hearty Italian sausage, vibrant bell peppers, and a rich tomato sauce, all tossed with tender pasta and topped with fresh basil and Parmesan cheese.


  • 1 lb Italian sausage, casings removed
  • 12 oz spaghetti or fettuccine noodles
  • 1 onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1/2 cup chicken broth
  • 1/4 cup dry white wine (optional)
  • 1/4 cup heavy cream
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • Salt and pepper to taste
  • Fresh basil leaves, chopped, for garnish
  • Grated Parmesan cheese, for serving


  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet or pan, cook the Italian sausage over medium-high heat, breaking it apart with a spoon, until browned and cooked through. Remove sausage from the pan and set aside.
  3. In the same pan, add a bit of olive oil if needed and sauté the onion and bell peppers until they begin to soften, about 5 minutes.
  4. Add the minced garlic to the pan and cook for another minute until fragrant.
  5. Stir in the diced tomatoes, chicken broth, and white wine (if using). Bring to a simmer and cook for about 5 minutes, allowing the flavors to meld.
  6. Reduce heat to low and stir in the heavy cream. Season with red pepper flakes, salt, and pepper to taste.
  7. Add the cooked sausage back into the pan and toss everything together gently.
  8. Finally, add the cooked pasta to the skillet, tossing well to combine and coat the pasta with the sauce.
  9. Serve hot, garnished with chopped fresh basil and grated Parmesan cheese.
