Homemade Turkish Pide Bread Recipe

This recipe makes delicious and fluffy pide bread, perfect for dipping, scooping, or using as a base for pizzas.


  • 1 tsp active dry yeast
  • 1/2 tsp white sugar
  • 1 1/2 cups warm water (104°F/40°C)
  • 2 1/2 cups all-purpose flour
  • 1 tsp salt
  • 2 tbsp olive oil
  • 1 egg yolk
  • 1 tbsp plain yogurt
  • 1 tbsp water
  • Sesame seeds (optional)
  • Nigella seeds (optional)


  1. Activate the yeast: In a small bowl, combine warm water, yeast, and sugar. Let sit for 5-10 minutes, until foamy and bubbly. This signifies the yeast is active.
  2. Make the dough: In a large bowl, whisk together flour and salt. Add the activated yeast mixture, olive oil, and knead with a dough hook or by hand for 8-10 minutes on a lightly floured surface. The dough should be smooth and elastic.
  3. First rise: Place the dough in a greased bowl, cover with plastic wrap, and let rise in a warm place for 1-1/2 hours, or until doubled in size.
  4. Shape the pide: Preheat oven to 400°F (200°C). Divide the dough in half and shape each half into a ball. On a lightly floured surface, roll each ball into a 10-inch oval.
  5. Second rise: Transfer the oval dough shapes to a baking sheet lined with parchment paper. Cover loosely with plastic wrap and let rise for another 30 minutes.
  6. Prepare the egg wash: In a small bowl, whisk together egg yolk, yogurt, and water. Brush the risen dough with the egg wash.
  7. Bake: Sprinkle the pide with sesame seeds and/or nigella seeds (optional). Bake for 20-25 minutes, or until golden brown.
  8. Serve: Let the pide cool slightly before slicing and serving. Enjoy warm!
