Ingredients

  • 2 cups cooked rice (preferably day-old)
  • 1 lb chicken breast, diced
  • 4 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 cup mixed vegetables (carrots, peas, bell peppers), chopped
  • 2 eggs, lightly beaten
  • 3 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 2 tbsp vegetable oil
  • 1 tbsp sesame oil
  • Salt and pepper to taste
  • Green onions, chopped (for garnish)

Instructions

  1. Prepare the Ingredients: Ensure all ingredients are prepped and ready to go. This includes dicing the chicken, chopping the vegetables, and having the cooked rice and minced garlic on hand.
  2. Cook the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the diced chicken and cook until it’s browned and fully cooked, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. Cook the Vegetables: In the same skillet, add another tablespoon of vegetable oil. Add the minced garlic and chopped onion. Sauté for about 2 minutes until fragrant and the onion becomes translucent. Add the mixed vegetables and cook for another 3-4 minutes until they are tender.
  4. Scramble the Eggs: Push the vegetables to the side of the skillet. Add the beaten eggs to the other side and scramble them until fully cooked.
