Ingredients
- 2 cups cooked rice (preferably day-old)
- 1 lb chicken breast, diced
- 4 cloves garlic, minced
- 1 small onion, finely chopped
- 1 cup mixed vegetables (carrots, peas, bell peppers), chopped
- 2 eggs, lightly beaten
- 3 tbsp soy sauce
- 2 tbsp oyster sauce
- 2 tbsp vegetable oil
- 1 tbsp sesame oil
- Salt and pepper to taste
- Green onions, chopped (for garnish)
Instructions
- Prepare the Ingredients: Ensure all ingredients are prepped and ready to go. This includes dicing the chicken, chopping the vegetables, and having the cooked rice and minced garlic on hand.
- Cook the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the diced chicken and cook until it’s browned and fully cooked, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- Cook the Vegetables: In the same skillet, add another tablespoon of vegetable oil. Add the minced garlic and chopped onion. Sauté for about 2 minutes until fragrant and the onion becomes translucent. Add the mixed vegetables and cook for another 3-4 minutes until they are tender.
- Scramble the Eggs: Push the vegetables to the side of the skillet. Add the beaten eggs to the other side and scramble them until fully cooked.
- Combine Ingredients: Add the cooked chicken back into the skillet with the vegetables and eggs. Stir everything together.
- Add the Rice and Sauces: Add the cooked rice to the skillet, breaking up any clumps with a spatula. Pour in the soy sauce and oyster sauce, stirring well to ensure the rice is evenly coated. Drizzle the sesame oil over the top and mix thoroughly.
- Season and Serve: Taste and season with salt and pepper as needed. Continue to stir-fry for another 2-3 minutes until everything is heated through. Garnish with chopped green onions and serve hot.
