Easy Veggie Noodle Stir Fry Recipe

This recipe is a great way to whip up a delicious and healthy meal in under 30 minutes. Feel free to customize the vegetables based on your preferences!


  • Noodles (12 oz): Choose your favorite kind! Options include rice noodles, lo mein, soba noodles, or even zucchini noodles for a low-carb option.
  • Vegetables (about 6 cups total, chopped): Here are some ideas for colorful and flavorful options
    • Bell peppers (red, yellow, orange)
    • Broccoli florets
    • Snap peas
    • Carrots (shredded)
    • Mushrooms (sliced)
    • Bean sprouts
    • Bok choy
    • Green onions (scallions)
  • Protein (optional): Tofu, tempeh, cooked chicken, shrimp, or edamame can add a protein boost.
  • Stir-fry Sauce (whisk these together in a bowl):
    • 3 tablespoons soy sauce (low-sodium preferred)
    • 1 tablespoon rice vinegar or lime juice
    • 1 tablespoon sesame oil
    • 1 tablespoon cornstarch (optional, for a thicker sauce)
    • 1 clove garlic, minced
    • 1 teaspoon grated ginger
    • Sriracha or chili flakes (optional, for heat)
  • Cooking oil (neutral oil like vegetable or peanut oil)
  • Sesame seeds or chopped peanuts (for garnish, optional)


  1. Cook the noodles according to package instructions. Drain and rinse with cold water to stop them from cooking further.
  2. While the noodles are cooking, prepare your vegetables and protein (if using). If using tofu or tempeh, you can marinate them in a bit of soy sauce and cornstarch for 10 minutes while you prep other ingredients.
  3. Heat a wok or large pan over medium-high heat. Add a drizzle of oil and swirl to coat the bottom.
  4. If using protein, cook it first according to its needs (tofu or tempeh may need a few minutes to crisp up, shrimp or chicken may need a bit longer). Remove from the pan and set aside.
  5. Add another drizzle of oil to the pan. Add your chopped vegetables (except green onions) and stir-fry for 3-5 minutes, or until tender-crisp.
  6. Push the vegetables to the side of the pan and add a bit more oil if needed. Pour in your stir-fry sauce and bring to a simmer. If using cornstarch, the sauce should thicken slightly.
  7. Add the cooked noodles and protein (if using) back to the pan and toss with the vegetables and sauce until heated through.
  8. Garnish with chopped green onions, sesame seeds, or chopped peanuts, and serve immediately.
