Delicious Hummus Salad Recipe

This refreshing salad features a creamy hummus dressing and a variety of colorful vegetables. It’s a perfect light lunch or side dish.


  • For the Salad:
    • 4 cups mixed greens
    • 1 cucumber, chopped
    • 1 tomato, chopped
    • 1 bell pepper, chopped (any color)
    • 1/2 cup crumbled feta cheese (or vegan alternative)
    • 1/4 cup chopped fresh parsley
    • 1/4 cup chopped fresh mint
  • For the Hummus Dressing:
    • 1/2 cup plain hummus
    • 2 tablespoons lemon juice
    • 2 tablespoons olive oil
    • 1 tablespoon Dijon mustard
    • Salt and freshly ground black pepper, to taste
    • 2 tablespoons water (optional)


  1. Prepare the Salad: In a large bowl, combine the mixed greens, cucumber, tomato, bell pepper, feta cheese, parsley, and mint.
  2. Make the Hummus Dressing: In a blender or food processor, combine the hummus, lemon juice, olive oil, Dijon mustard, salt, and pepper. Blend until smooth. If the dressing is too thick, add water 1 tablespoon at a time until it reaches your desired consistency.
