Deli Style Chicken Salad Recipe

This recipe creates a classic deli-style chicken salad, perfect for sandwiches, wraps, or a light lunch.

  • 4 cups cooked and shredded chicken (breast or a mix of breast and thigh)
  • 1/2 cup mayonnaise (more or less to taste)
  • 1/4 cup finely diced celery (about 2 stalks)
  • 1/4 cup diced red onion (optional)
  • 1 tablespoon pickle relish (sweet or dill, with juice)
  • 1/2 teaspoon dried dill weed
  • 1/2 teaspoon poultry seasoning
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

  1. In a large bowl, combine the mayonnaise, pickle relish, dill weed, poultry seasoning, salt, and pepper.
  2. Add the shredded chicken, celery, and red onion (if using) and stir gently to combine.
  3. Taste and adjust seasonings as needed. Add more mayonnaise for a creamier salad.
  4. Cover and refrigerate for at least 1 hour, or up to overnight, to allow the flavors to meld.
  5. Serve on bread, croissants, or lettuce wraps.
