Custard Filled Pastries Recipe

This recipe creates delicious pastries filled with rich and creamy custard. Choose your favorite pastry dough or puff pastry for a delightful treat.


  • For the Custard:
    • 2 cups whole milk
    • 1/2 cup granulated sugar
    • 4 large egg yolks
    • 1/3 cup cornstarch
    • 1 teaspoon vanilla extract
  • For the Pastries:
    • 1 sheet puff pastry (thawed) OR your favorite pastry dough recipe (enough for 12 pastries)
    • 1 egg yolk (for egg wash)
    • Sugar for sprinkling (optional)


  1. Make the Custard:
    • In a saucepan, heat the milk over medium heat until simmering (not boiling).
    • In a separate bowl, whisk together the egg yolks, sugar, and cornstarch until light and fluffy.
    • Slowly whisk the hot milk into the egg yolk mixture, a little at a time, until fully incorporated.
    • Return the mixture to the saucepan and cook over medium heat, whisking constantly, until it thickens and begins to simmer. The custard should coat the back of a spoon.
    • Remove from heat and stir in the vanilla extract.
    • Pour the custard into a bowl, press plastic wrap directly onto the surface to prevent a skin from forming, and let cool completely at room temperature.
  2. Prepare the Pastries:
    • Preheat oven to 400°F (200°C). Lightly grease a baking sheet.
    • If using puff pastry, unfold the sheet and roll it out gently on a lightly floured surface. Cut into squares or your desired pastry shapes.
    • Alternatively, follow your chosen pastry dough recipe to prepare and cut out your desired shapes.
    • Place the pastries on the prepared baking sheet.
  3. Assemble and Bake:
    • In a small bowl, whisk the egg yolk with a splash of water to create an egg wash. Brush the tops of the pastries with the egg wash.
    • Spoon a dollop of cooled custard into the center of each pastry.
    • (Optional) Sprinkle the tops with a little sugar for a caramelized crust.
  4. Bake for 20-25 minutes, or until the pastry is golden brown and the custard is set.
  5. Let cool slightly before serving and enjoy!
