Cucumber Tomato Salad Recipe

This is a refreshing and simple salad perfect for a summer side dish or light lunch.

Ingredients:

  • 1 large English cucumber, sliced
  • 2-3 large tomatoes, diced
  • ½ red onion, thinly sliced (optional)
  • Fresh herbs (optional):
    • 1 tablespoon chopped parsley
    • 1 tablespoon chopped basil
    • 1 tablespoon chopped dill
  • Dressing:
    • 2 tablespoons olive oil
    • 1 tablespoon red wine vinegar
    • Salt and pepper to taste

Instructions:

  1. Combine sliced cucumber, diced tomatoes, and thinly sliced onion (if using) in a large bowl.
  2. Add chopped fresh herbs of your choice (parsley, basil, dill, or a combination) to the bowl.
  3. In a separate small bowl, whisk together olive oil, red wine vinegar, salt, and pepper.
  4. Pour the dressing over the salad ingredients and toss gently to coat.
  5. Taste and adjust seasonings with additional salt and pepper as desired.

Tips:

  • For a creamier salad, add 1 tablespoon of crumbled feta cheese or a drizzle of plain yogurt to the dressing.
