Cucumber Tomato Salad Recipe

This is a refreshing and simple salad perfect for a summer side dish or light lunch.


  • 1 large English cucumber, sliced
  • 2-3 large tomatoes, diced
  • ½ red onion, thinly sliced (optional)
  • Fresh herbs (optional):
    • 1 tablespoon chopped parsley
    • 1 tablespoon chopped basil
    • 1 tablespoon chopped dill
  • Dressing:
    • 2 tablespoons olive oil
    • 1 tablespoon red wine vinegar
    • Salt and pepper to taste


  1. Combine sliced cucumber, diced tomatoes, and thinly sliced onion (if using) in a large bowl.
  2. Add chopped fresh herbs of your choice (parsley, basil, dill, or a combination) to the bowl.
  3. In a separate small bowl, whisk together olive oil, red wine vinegar, salt, and pepper.
  4. Pour the dressing over the salad ingredients and toss gently to coat.
  5. Taste and adjust seasonings with additional salt and pepper as desired.


  • For a creamier salad, add 1 tablespoon of crumbled feta cheese or a drizzle of plain yogurt to the dressing.
  • If the tomatoes are very juicy, you can drain some of the excess liquid before adding them to the salad.
  • Chill the salad in the refrigerator for at least 15 minutes before serving for a refreshing side dish.
  • This salad is best enjoyed fresh, but leftovers can be stored in the refrigerator in an airtight container for up to 2 days.
