Crispy Roasted Potatoes Recipe

This recipe is a foolproof way to achieve restaurant-worthy crispy roasted potatoes at home.


  • 2 lbs Russet potatoes (about 4 medium potatoes)
  • 3 tablespoons olive oil
  • 1 tablespoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • Optional seasonings: rosemary, thyme, garlic powder, smoked paprika (choose one or combine a few!)


  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Wash and dry the potatoes. Cut them into 1-inch cubes.
