Cream Chipped Beef on Toast (SOS) Recipe

This recipe is for a classic comfort food, creamed chipped beef on toast, also known as SOS. It’s a quick and easy dish that’s perfect for a hearty breakfast, brunch, or lunch.


  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 ½ cups milk (warmed)
  • 1 (8 ounce) jar dried beef, chopped
  • Pinch of cayenne pepper (optional)
  • Bread slices for toast


  1. Make the Roux: In a saucepan over medium heat, melt the butter. Whisk in the flour until smooth and no lumps remain. Cook for about a minute, stirring constantly, to cook out the raw flour taste.
  2. Whisk in Milk: Slowly whisk in the warmed milk, a little at a time, until fully incorporated. Bring the mixture to a simmer and cook, stirring occasionally, until thickened.
  3. Add Beef and Seasoning: Add the chopped dried beef and cayenne pepper (if using) to the thickened sauce. Stir to heat through for a few minutes. Season with salt and pepper to taste.
  4. Serve: While the sauce simmers, toast your bread slices. Spoon the hot creamed chipped beef mixture over the toast and serve immediately.
