Classic Wafer Cookies Recipe

These homemade wafer cookies are light, crisp, and perfect for enjoying on their own or using in dessert recipes.


  • 1 cup all-purpose flour
  • ½ cup powdered sugar
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract


  1. Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, powdered sugar, and salt.
  3. In a separate bowl, cream together the softened butter and egg until light and fluffy. Beat in the vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  5. Drop tablespoons of dough onto the prepared baking sheets, leaving a couple of inches between each cookie to spread.
  6. Bake for 8-10 minutes, or until the edges are golden brown.
  7. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.


  • For a vanilla wafer flavor, add 1/2 teaspoon of vanilla extract to the wet ingredients.
