  • For the cake:
    • 1 ¾ cups all-purpose flour
    • ¾ cup unsweetened cocoa powder
    • 1 ½ teaspoons baking powder
    • 1 teaspoon baking soda
    • 1 teaspoon salt
    • 1 ½ cups granulated sugar
    • ½ cup brown sugar
    • ½ cup vegetable oil
    • 1 cup buttermilk
    • 2 large eggs
    • 2 teaspoons pure vanilla extract
    • 1 cup boiling water
    • 1 teaspoon instant espresso powder (optional)
  • For the chocolate frosting (optional):
    • 1 cup unsalted butter, softened
    • 3-4 cups powdered sugar
    • ½ cup unsweetened cocoa powder
    • ¼ cup milk
    • 1 teaspoon vanilla extract

  1. Preheat the oven to 350°F (177°C). Grease and flour two 8-inch round cake pans.
  2. Whisk dry ingredients: In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
  3. Combine sugars and oil: In a separate bowl, whisk together the granulated sugar and brown sugar. Then, add the vegetable oil and mix until well combined.
  4. Wet ingredients: Add the buttermilk, eggs, and vanilla extract to the sugar mixture and beat until smooth.
  5. Dry and wet together: Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Hot water and espresso: In a small bowl, stir together the boiling water and instant espresso powder (if using). Slowly add this mixture to the cake batter, mixing well.
  7. Bake the cakes: Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool the cakes: Let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
  9. Frosting (optional): While the cakes cool, prepare your favorite chocolate frosting recipe or use the following recipe: Cream together the softened butter and powdered sugar until light and fluffy. Add the cocoa powder, milk, and vanilla extract and beat until smooth and spreadable.
  10. Frost the cake: Once the cakes are cool, frost between the layers and all over the outside of the cake. Enjoy!
