  • 1 cup grated zucchini
  • 1 cup grated carrots
  • 1 cup grated potatoes
  • 1/2 cup grated cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup all-purpose flour
  • 2 large eggs, lightly beaten
  • Salt and pepper to taste

  1. Prepare the Vegetables: Place grated zucchini, carrots, and potatoes in a clean kitchen towel or cheesecloth. Squeeze out excess moisture.
