Cheesy Baked Potato Rounds Recipe

These cheesy baked potato rounds are a fun and delicious twist on the classic baked potato. They’re crispy on the outside and cheesy on the inside, and they’re perfect for a side dish or a light meal.

  • 4 medium russet potatoes
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese (or your favorite cheese)
  • Optional toppings: crumbled bacon, chopped green onions, sour cream

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Slice the potatoes into rounds about 1/2 inch thick. You can use a sharp knife or a mandoline for even slices.
  3. In a large bowl, toss the potato slices with olive oil, salt, and pepper. Make sure the slices are evenly coated.
  4. Arrange the potato slices in a single layer on the prepared baking sheet. Don’t crowd the pan, or the potatoes won’t crisp up properly.
  5. Bake the potato rounds for 20-25 minutes, or until they are tender and golden brown on the edges. Flip the slices halfway through baking for even cooking.
  6. Remove the pan from the oven and sprinkle the shredded cheese over the potato rounds. You can also add any other toppings you like, such as crumbled bacon, chopped green onions, or sour cream.
  7. Bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  8. Serve immediately and enjoy!
