  • 2 large apples (1 sweet, 1 tart)
  • 3 cups shredded carrots
  • 1/2 cup dried cranberries or raisins (optional)
  • 1/4 cup chopped walnuts or pecans (optional)


  • 1/3 cup mayonnaise
  • 1/3 cup plain Greek yogurt
  • 2 tablespoons honey
  • 2 teaspoons lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


  1. Prep the apples: Wash, core, and cut the apples into thin matchsticks. To prevent browning, toss the apples in a bowl with lemon juice.
