  • For the Crust:
    • 1 1/2 cups graham cracker crumbs
    • 1/3 cup unsalted butter, melted
    • 1/4 cup packed light brown sugar
  • For the Cheesecake Filling:
    • 2 (8-ounce) packages cream cheese, softened
    • 3/4 cup granulated sugar
    • 1 tablespoon all-purpose flour
    • 2 large eggs
    • 1 teaspoon vanilla extract
    • 1/2 teaspoon ground cinnamon
    • 1/4 teaspoon salt
    • 1 (14.5-ounce) can diced apples, drained (or 2-3 apples peeled, cored, and diced)
    • 1/4 cup caramel sauce
  • For the Caramel Apple Topping (Optional):
    • 1 medium apple, thinly sliced
    • 2 tablespoons butter
    • 1/4 cup brown sugar
    • 1/4 cup heavy cream
    • 1/4 cup caramel sauce

  1. Prepare the Crust: Preheat oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, melted butter, and brown sugar. Press the mixture firmly into the bottom and up the sides of a greased 9-inch springform pan. Bake for 10 minutes. Let cool completely.
  2. Make the Cheesecake Filling: In a large bowl, beat the cream cheese and granulated sugar until smooth. Beat in the flour, eggs one at a time, then vanilla extract, cinnamon, and salt. Gently fold in the drained diced apples and 1/4 cup caramel sauce.
  3. Assemble and Bake: Pour the cheesecake filling over the cooled crust. Bake for 50-60 minutes, or until the center is slightly set (it will continue to set as it cools).
  4. Cool the Cheesecake: Let the cheesecake cool completely at room temperature, then refrigerate for at least 4 hours or overnight.
  5. Caramel Apple Topping (Optional): In a skillet over medium heat, melt butter. Add sliced apples and cook until softened, about 5 minutes. Stir in brown sugar and cook for another minute. Add heavy cream and 1/4 cup caramel sauce, bring to a simmer, and cook until slightly thickened, about 2 minutes. Let cool slightly.
  6. Serve: Top the chilled cheesecake with the caramel apple topping and drizzle with additional caramel sauce, if desired.
