This recipe creates a delicious and easy sweet and sour chicken dish right in your oven.

  • For the Chicken:
    • 1 pound boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
    • Salt and pepper to taste
    • 1 cup cornstarch
    • 2 eggs, beaten
    • Vegetable oil for frying
  • For the Sweet and Sour Sauce:
    • 1/2 cup white or brown sugar
    • 1/3 cup ketchup
    • 1/3 cup apple cider vinegar
    • 1 tablespoon soy sauce
    • 1 teaspoon Worcestershire sauce (optional)
    • 1/2 cup pineapple chunks (drained, from a 15 oz can)
    • 1/4 cup pineapple juice (from the can)
    • 1 red bell pepper, diced (optional)
    • 1 green bell pepper, diced (optional)

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. Season the chicken: Season the chicken pieces with salt and pepper.
  3. Set up the breading station: In separate shallow bowls, prepare the cornstarch and beaten eggs.
  4. Bread the chicken: Dredge each piece of chicken in the cornstarch, then dip it in the egg mixture, making sure to coat it evenly.
  5. Fry the chicken (optional): Heat about 1/4 inch of vegetable oil in a large skillet over medium-high heat. Fry the chicken pieces for 1-2 minutes per side, or until golden brown. Drain on paper towels. This step is optional, but it adds a nice crispy texture to the chicken.
  6. Prepare the sauce: In a medium bowl, whisk together the sugar, ketchup, apple cider vinegar, soy sauce, and Worcestershire sauce (if using). Stir in the pineapple chunks, pineapple juice, and diced peppers (if using).
  7. Bake the chicken: Pour the sauce over the breaded chicken pieces in the prepared baking dish. Bake for 25-30 minutes, or until the chicken is cooked through and the sauce is bubbly.
  8. Serve: Serve immediately over cooked rice. Enjoy!
