These delicious apple fritter bites are a perfect fall treat! They’re small and easy to eat, making them ideal for a snack or potluck.

  • For the fritters:
    • 1 1/2 cups all-purpose flour
    • 1/4 cup granulated sugar
    • 2 teaspoons baking powder
    • 1/2 teaspoon salt
    • 2 teaspoons ground cinnamon
    • 2/3 cup milk
    • 2 eggs, beaten
    • 1 teaspoon vanilla extract
    • 2 tablespoons butter, melted
    • 2 Granny Smith apples, cored, peeled, and diced (about 1 cup)
  • For the glaze (optional):
    • 1 cup powdered sugar
    • 1/4 teaspoon salt
    • 1/4 teaspoon vanilla extract
    • 1/4 cup milk

  1. Prepare the dry ingredients: In a medium bowl, whisk together the flour, baking powder, salt, and cinnamon.
  2. Combine the wet ingredients: In a large bowl, whisk together the milk, eggs, vanilla extract, and melted butter.
  3. Mix the batter: Add the dry ingredients to the wet ingredients and mix until just combined. Be careful not to overmix!
  4. Fold in the apples: Gently fold the diced apples into the batter.
  5. Heat the oil (frying method): In a large pot or Dutch oven, heat enough oil (vegetable or canola oil) to a depth of about 2 inches to 350°F (175°C).
  6. Fry the fritters: Using a tablespoon, scoop the batter into the hot oil. Fry the fritters for 1-2 minutes per side, or until golden brown.
  7. Drain the fritters: Transfer the fried fritters to a paper towel-lined plate to drain excess oil.
  8. Make the glaze (optional): In a small bowl, whisk together the powdered sugar, salt, vanilla extract, and milk until smooth. You can adjust the consistency of the glaze by adding more milk if it’s too thick or more powdered sugar if it’s too thin.
  9. Drizzle and serve: Drizzle the glaze over the warm fritters (optional) and serve immediately.
