These fritters are a delicious and savory treat, perfect as a side dish or appetizer.


  • 2 large onions, finely chopped (about 2 ½ cups)
  • ¾ cup all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 tablespoon cornmeal
  • 2 teaspoons baking powder
  • 1-2 teaspoons salt, to taste
  • ¾ cup milk
  • Cooking oil, for frying


  1. Make the batter: In a large bowl, whisk together the dry ingredients: flour, sugar, cornmeal, baking powder, and salt.
  2. Add wet ingredients: Create a well in the center of the dry ingredients. Pour in the milk and stir until just combined. The batter will be thick.
  3. Incorporate the onions: Fold in the chopped onions until evenly distributed.
  4. Heat the oil: Pour enough oil into a large skillet or dutch oven to reach a depth of ½ inch. Heat the oil over medium-high heat to 350-375°F (ideally, use a thermometer to check the temperature).
  5. Fry the fritters: Carefully spoon the batter into the hot oil, flattening them slightly. Fry for 2-3 minutes per side, or until golden brown and crispy.
